  • 1 teaspoon vanilla
  • 1 egg
  • 1 tablespoon flaxseed
  • 1/2 cup shredded carrots
  • 1/4 cup Pecans
  • 1/4 cup Organic Coconut Flakes
  • 1/4 cup unflavored protein powder
  • Coconut, date or Maple Syrup optional for topping

Instructions

  • In a high-speed blender, blend oats until flour-like consistency, making oat flour.
  • Add in the remainder of ingredients and blend until well combined but not over blending. Scrape down sides as needed.
  • Let the batter rest for about 5 minutes to thicken up, you want it to be pretty thick!
  • Pour 1/3 cup batter onto a medium-low skillet that has been greased with coconut oil.
  • Flip over once bubbles have formed and the bottom is golden brown.
  • Repeat until all pancakes are made.

Looking for a gluten-free muffin that’s kid-tested and mom-approved? Then you’ve come to the right place. These Double Chocolate Flourless Blender Muffins are easy and did I mention kid-approved?!

Ingredients

  • 2 medium bananas, roughly 1 cup, mashed
  • ½ cup gluten-free whole grain oats
  • 2 eggs
  • 1 tsp vanilla
  • ½ tsp baking soda
  • 1 cup almond butter
  • 1 tbsp cacao powder
  • 3 tbsp coconut syrup, maple syrup works too
  • ½ cup chocolate chips
  • ¼ cup blueberries for topping

Instructions

  • Preheat the oven to 400 degrees. Line 12 cup muffin tin and set aside.
  • Place all the ingredients except the chocolate chips and blueberries in a high-speed blender. Blend until a smooth thick batter-like consistency is reached.
  • Gently fold in chocolate chips. Pour evenly into the prepared muffin tin and top with 2-3 blueberries.
  • Bake for 12-ish minutes or until a toothpick inserted comes out clean.
  • Allow to cool for 5-10 minutes and enjoy a few warm, and store the rest in the fridge for the week.

Last year was the year TikTok exploded. With TikTok came food trends to try like baked oatmeal. So I’m sharing my version, Quick + Easy Chocolate Coconut Baked Oatmeal. Before we dive in, I must confess, if there’s one food trend I was making & devouring before social media – it was avocado toast. Us California kids grew up eating avocado toast! Anyway, if you haven’t jumped on the baked oatmeal trend I highly suggest you give it a try!

Those who know me or have been around for a while know – I LOVE OATS! Overnight oats, muffins, cookies, pancakes, baked oats, smoothies, etc. AND I love adding collagen to baked goods! By now I think it’s safe to assume we’ve all heard of collagen. And we all know BUBS Naturals is my preferred choice. Plus, code TIARA20 snags you a sweet discount!

Oats are a great way to get in a nutrient-dense meal. If you’re “bulking/building” it’s the perfect side to your egg scramble! Or if you’re just looking for something to fuel your mornings — This is it! It’s something that you can easily meal prep too!

Chocolate Coconut Baked Oatmeal

If you love oats then you'll definitely want to try these baked oats. They're a cross between oatmeal and a granola bar!

Ingredients

  • 1 banana, ripe
  • 1/4 cup almond milk
  • 1/2 cup rolled oats
  • 2 tbsp nut butter
  • 1 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla extract
  • 1 scoop BUBS Naturals Collagen
  • pinch of sea salt
  • 1/2 tbsp toasted coconut flakes
  • Fresh strawberries for topping

Instructions

  • Preheat the oven to 350ºF. Lightly spray 2 small ramekins or 1 large one and set aside.
  • In a blender, combine oats, banana, nut milk, nut butter, syrup, baking powder, extract, and salt until smooth and creamy. Don’t be afraid to any more oats or nut milk to reach the desired consistency.
  • Pour into the ramekins. Top with a few coconut flakes and sliced strawberries.
  • Bake for 20-ish minutes. Let cool slightly and enjoy!

  • 100 g Dragon Fruit, ⁣ frozen ⁣
  • 100 g Banana, frozen ⁣

I don’t know about you, but I’m a big fan of anything peanut butter & jelly, so of course, I had to try them in cup form! Let me introduce you to your next favorite treat: Peanut Butter & Jelly Cups. These are a fun spin on the classic peanut butter cup, and some might say they’re like a deconstructed PB&J sandwich! Whether you’re looking for a simple snack or a sweet treat for a gathering, these PB&J cups are the perfect choice.

I first made these for Wildly Organic, but they turned out so good, I had to share them here too!

Pro-tip: Make a double batch and freeze half for later—they keep for up to three months. Trust me, you’ll be glad you did!

Peanut Butter & Jelly Cup Essentials 

  • Dark Chocolate
  • Coconut oil
  • powdered sugar
  • your favorite nut butter
  • raspberry preserves because it’s the BEST
  • silicone cups
  • muffin tin
  • measuring spoons

For one batch, I used homemade cherry chia jam, and it was legit! Have you ever made quick jam? It’s surprisingly easy!

Peanut Butter & Jelly Cups

These peanut butter & jelly cups are a fun twist of the traditional peanut butter cup. Some might even say it's like a re-constructed peanut butter and jelly sandwich!
Course Dessert
Cuisine American
Prep Time 20 minutes
chilling 45 minutes
Total Time 1 hour 5 minutes
Servings 12 cups

Ingredients

  • 16 oz dark chocolate chips
  • 1 ½ tsp coconut oil
  • 1/2 cup creamy natural peanut butter, well-stirred (any natural nut butter will work)
  • 1/2 cup powdered sugar
  • ¼ cup raspberry jam

Instructions

  • Line a 12- cup muffin tin. Silicone works best.
  • Time to Melt that chocolate! Fill a small saucepan with water, about ⅓ of the way. Place over medium heat containing. Next place a glass, or heatproof bowl over the saucepan — a cereal bowl will do the trick. Make sure the water isn’t touching the bowl. Place the chocolate chips and coconut oil in the bowl, stir to combine. This will take some time. Stir slowly until completely melted. Once completely melted, carefully remove the bowl of chocolate from the saucepan.
  • Using a tablespoon measuring spoon, pour measured melted chocolate into each liner. Swirl each liner to allow for the sides to be covered with the chocolate. Transfer to the freezer. Allow 30 minutes for chilling. While the chocolate is chilling prep the PB mixture.
  • In a small bowl, combine PB & Powdered sugar. If it’s still on the too creamy running side add a tad more powdered sugar.
  • Once the chocolate has chilled, using a spoon evenly distribute the PB mixture amount the cups. Make sure they are in the center and not touching the sides. Top the PB mixture with 1 teaspoon of jam (more depending on how you like your PB to jam ratio).
  • Using the remaining melted chocolate, pour another tablespoon over the PB&J to cover fully. Make sure to fill any open areas along the edge of the liners.
  • Freeze for an additional 30 minutes to an hour until hardened. Thaw at room temperature or refrigerate for 20-30 minutes before eating to allow cups to soften up.

Notes

Pro-tip: Make a double batch and freeze half for later. These cups will keep for up to three months.
