WOW, it has been a week. I don’t know about you, but I’m so ready for the Holidays to be over and ready to regain order in my life…. if that’s possible. With that said, I’ll dive right into Friday Favorites because let’s be real that’s why you’re here

Best Meal of the Week
Last night I made macro friendly chicken enchiladas. Yes, it’s possible. Anyway, head over to Macro Miranda’s page for the full recipe. However, here are the adjustments I would make if I made them again. I would double the amount of cheese. To save on fat I would probably use half nonfat cheese and half reduced fat cheese. I would also use 300-400g of the salsa verde. Last night I did top mine with 1 oz avocado and 30g pico….and they were delish! P.S. I used leftover shredded chicken for the filling!

Let’s cut to the chase. Every one is making resolutions and probably more than 50% are fitness related.

Am I right?!

I’m not any different. I let myself go a little over the Holidays, but I’m back on track. One thing I’m trying to focus on is meal planning and prepping.

I’m more likely to stay on track if I have a plan and a fridge full on healthy meals and snacks.

Although, precooked and prepped meals and snacks are easy I prefer to make everything myself. That way I know what’s in it. This week I prepped a few different things like chopped veggies, steel cut oats, and muffins for the hubby and Emerson. I think Emerson preferred the Blueberry Muffins over her Toddler [Spinach, Carrot and Banana] Muffins.

There’s one key kitchen gadget to making tasty muffins — a mixer. If you’re a big baker you’ll want a stand mixer, but if you’re a beginner cook a hand mixer will do. Or if you’re like me you need and use both! Sometimes you just don’t need a big stand mixer to get the job done.

Blogger Thoughts
When I first picked up the box I thought “wow, this is so light.” Then immediate wasn’t sure if it would be heavy duty like my other very popular stand mixer [cough, cough Kitchen Aid]. Here’s the thing — surprisingly it was! Over the last month I’ve been using this stand mixer for all my baking needs. Cookies, muffins, pizza dough you name it I might have made it.

It mixes ingredients well and the bowl only needs minimal scraping. Hamilton Beach makes baking a no brainer with the cheat sheet on the side of the mixer. This is helpful if you’re not sure what attachment or speed to use! Another feature I love is the non-slip suction feet! Because it is so light you one, don’t have to worry about breaking your back lifting it and two, know it’s securely attached to the counter if you walk away for a second or two. Moms you know what I’m talking about. Oh, I can’t forget about the price — it’s only $109.99!!

My husband loves that it’s dishwasher safe!

This was a nice upgrade from my old Hamilton Beach hand mixer. I’m loving all the different attachments, power and of course the pulse option!  Now for some deliciousness I whipped up for breakfast this week, Blueberry Muffins!

Blueberry Muffins 
Makes 12

Ingredients

2/3 cup sugar [plus, 1 tbsp sugar for the top, optional]
1 large egg
1/2 cup avocado oil  [vegetable oil works too]
1/3 cup almond milk
1 tsp vanilla
1 1/4 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup plain greek yogurt [I used raspberry for a little extra flavor]
1 cup blueberries [I used frozen]

Directions 

Preheat oven to 375ºF.

Place 12 muffin liners in cupcake pan.

Using a mixer, combine sugar, egg, oil, milk, and vanilla. Mix until well combined. Add the flour, baking powder and salt. Don’t worry about getting another bowl just add the dry ingredients right on top of the wet ingredients. Mix until smooth. Add greek yogurt and mix until combine. Fold in the blueberries.

Evenly distribute the batter in the muffin tin.

Sprinkle the tops with the 1 tablespoon of sugar.

Bake for about 30 minutes.

This year it was our turn to spend Thanksgiving with Nick’s family so we packed our bags and headed to Colorado for the week. Although, Emerson is an avid flyer there were still a few firsts — like Emerson’s first time to Colorado, first Holiday spent in Nick’s parents new house and the first time my sister-in-law and nephew met Emerson.

My sweet little family. Apparently Emerson wasn’t having any of it!

We actually caught a few days of sunshine while we where there. Of course we spend it outside!
Girlfriend trekked 9 miles in the Ergo to Horsetooth!

Before the snow rolled in we made are way to Estes Park/Rocky Mountain National Park where we saw Elk, mountain sheep and deer! More on this later.

Of course, we spent the Wednesday before Thanksgiving prepping. Nick’s mom made a fantastic spread for Thanksgiving!

I even made a few dishes, spicy green beans and cranberry chutney! It was my first time making cranberry chutney and I loved it! If you like a tart cranberry sauce for your turkey then you will love it too!

Cranberry Chutney

Ingredients

1 lb Cranberries, fresh
½ cup Raspberries, frozen
¼ cup Water
½ cup Celery, finely chopped
Juice and Zest of 1 Orange
1 tablespoon Honey
¼ teaspoon Cinnamon

Directions

Heat a medium saucepan over medium-high heat. Add water, orange juice, orange zest, honey and cinnamon and bring to a boil.

Reduce heat to medium-low and add cranberries. Continue to cook until they become soft and burst, about 15-20 minutes, stirring occasionally.

Add raspberries and celery, cook an additional 10 minutes, until raspberries begin to burst.

Reduce heat to low and cover until ready to serve.
