Let&#8217;s just say there wasn&#8217;t any leftovers.&nbsp;<\/span><\/strong><br \/>\n<strong><span style=\"font-weight: normal;\"><br \/><\/span><\/strong><br \/>\n<strong><span style=\"font-weight: normal;\">Enjoy!&nbsp;<\/span><\/strong><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"https:\/\/ahappyhealthyhome.com\/wp-content\/uploads\/2012\/07\/pasta-1024x1024.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"640\" src=\"https:\/\/ahappyhealthyhome.com\/wp-content\/uploads\/2012\/07\/pasta-1024x1024.jpg\" width=\"640\" \/><\/a><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<strong>Easy-Peasy Peanut Noodles with Chicken<\/strong><\/div>\n<div style=\"text-align: center;\">\nSource: <a href=\"http:\/\/prettydeliciouscookbook.com\/\" target=\"_blank\" rel=\"noopener noreferrer\"><em>Pretty Delicious<\/em><\/a><\/div>\n<div style=\"text-align: center;\">\nSERVES 4<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>Ingredients:<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n1\/2 pound whole wheat spaghetti<br \/>\n1 1\/2 teaspoons sea salt<br \/>\n1 tablespoon dark sesame oil<br \/>\n3\/4 pound boneless, skinless chicken breasts, cut crosswise into 1\/2-inch-wide strips<br \/>\n1 1\/2 tablespoons grated fresh ginger<br \/>\n3 garlic cloves, finely minced<br \/>\nHeaping 1\/4 cup creamy natural peanut butter<br \/>\n3 tablespoons honey<br \/>\n3 tablespoons reduced-sodium soy sauce<br \/>\n3\/4 teaspoon red pepper flakes<br \/>\n1 cup sliced shiitake mushroom caps or 1\/2 cup dried shiitake<br \/>\nmushrooms soaked in boiling water for 5 minutes, drained, and chopped<br \/>\n1 red bell pepper, halved and thinly sliced<br \/>\n1 large zucchini, halved lengthwise and thinly sliced crosswise<br \/>\n3 scallions, cut into strips<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>Directions:<\/b><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nBring a large pot of water to a boil. Add the pasta and salt and<br \/>\n cook until al dente, 8 to 10 minutes. Scoop out 1\/4 cup of the pasta<br \/>\ncooking water and then drain the pasta in a colander.<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nRinse the pasta under cold running water for a minute or two to chill<br \/>\n the noodles. Give them a few shakes to remove the excess water and set<br \/>\naside.<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nHeat the sesame oil in a large, deep nonstick skillet over medium<br \/>\nheat. Add the chicken and cook, stirring often, until golden brown on<br \/>\nall sides and cooked through, about 8 minutes. Transfer the chicken to a<br \/>\n plate and set aside.<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nAdd the ginger and garlic to the pan and cook, stirring often, until<br \/>\nfragrant, about 1 minute. Stir in the peanut butter, honey, soy sauce,<br \/>\nred-pepper flakes, and reserved pasta cooking water and cook until<br \/>\ncreamy, about 2 minutes.
