I made extra for breakfast on-the-go during the week.. best idea ever.<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"https:\/\/lh5.googleusercontent.com\/-8fJf4ohjVPo\/UUiRlsM2F_I\/AAAAAAAAJCE\/ofU8h08f0X8\/s1600\/blogger-image--2074217169.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img decoding=\"async\" border=\"0\" src=\"https:\/\/lh5.googleusercontent.com\/-8fJf4ohjVPo\/UUiRlsM2F_I\/AAAAAAAAJCE\/ofU8h08f0X8\/s1600\/blogger-image--2074217169.jpg\" \/><\/a><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b>Breakfast Muffins<\/b><\/div>\n<div style=\"text-align: center;\">\nMakes 12-15<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b><u>Ingredients<\/u><\/b><\/div>\n<div style=\"text-align: center;\">\n<span class=\"Apple-style-span\" style=\"font-size: x-small;\"><i>This is where you can get creative and make them your own<\/i><\/span><\/div>\n<div style=\"text-align: center;\">\nHalf red bell pepper<\/div>\n<div style=\"text-align: center;\">\nQuarter\/half red onion<\/div>\n<div style=\"text-align: center;\">\nHalf jalapeno<\/div>\n<div style=\"text-align: center;\">\nSalt<\/div>\n<div style=\"text-align: center;\">\nPepper<\/div>\n<div style=\"text-align: center;\">\n12 eggs<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<b><u>Directions<\/u><\/b><\/div>\n<div style=\"text-align: center;\">\nPreheat oven 350 degrees.<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nSaute red onions in olive oil over medium-high heat for 2-3 minutes. Add peppers and jalapeno, continue cooking for another 2-3 minutes.<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nWhile peppers are cooking, whisk eggs in a large bowl. Once onions\/peppers are cooked, remove from heat and let cool for a few minutes. Dump in egg mixture and stir well, sprinkling in the salt and pepper.&nbsp;<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nCoat a large muffin pan with olive oil or coconut oil spray. Using a 1\/4 cup measuring cup, fill each muffin cup.&nbsp;Place in oven for 10-15 minutes. Remove them once the tops get high, fluffy and golden brown.
